Culinary Experiences from Executive Chef Jonathan Wright at Sandy Lane – Barbados
Sandy Lane – Barbados
Sandy Lane is located on the western coast of the island of Barbados. Sandy Lane was originally built in 1961.
Dermot Desmond, J.P. McManus and partners purchased the Sandy Lane property and golf course back in 1996 and completely rebuilt and expanded, opening in March 2001.
Sandy Lane, Barbados continually strives to surprise their vacationing resort guests on each visit.
For a true fine dining delight, Executive Chef Jonathan Wright has created a new series of palate-pleasing culinary offerings.
Chef Wright collaborated with the resort’s expert team of chefs, drawing inspiration from over twenty years of personal award-winning culinary experience to inject tantalizing flavors into menus at the resort’s fine dining restaurant L’Acajou and beachside eatery Bajan Blue.
A new seasonal menu was created and introduced this summer at L’Acajou. The menu features the finest local ingredients—from vegetables, spices, herbs, and seafood, often sourced from local farmers and anglers—to create a simple yet savory dining experience.
Created especially for visiting food connoisseurs, L’Acajou introduced a six-course Gourmand Tasting Menu, which features a number of house specialties.
The menu, which changes weekly, includes an amuse bouche of panacotta of cauliflower with Pickled Beets, A la Greque of garden vegetables, Chilled Pea Soup and delicate jelly of Iberico ham or sorbet of locally grown tomatoes for $350 Barbadian Dollars (BBD) / $175 USD per person.
Rates for 2011 at Sandy Lane range from US$ 1,015 to $4,200 for rooms, $ 1,825 to $6,200 for suites, and $ 4,050 to $10,000 for penthouses, and $ 9,115 to $25,000 for the Villa at Sandy Lane.
