A huge rotisserie is covered with chicken halves and slowly grilled over a bed of mesquite charcoal. Huli Huli barbecued chicken is a Hawaiian specialty and must be tried. It gets its name from the Huli Huli sauce, which is made from a recipe of Asian chili paste, soy sauce, brown sugar, olive oil, ketchup, honey, lime juice, minced garlic and ginger root, salt and pepper.
